Hi spouti89.
Firstly, its recommened to use one Squeezebox Server (LMS) in your setup. it would be better to have one LMS and multiple players that could be synchronise using the LMS web-interface. Moreover, in order to enable LMS to use the Airplay devices, you can install Shairtunes2 plugin from Install special Plugins for Squeezebox Server on the Squeezebox Server plugin webpage.

Max2Play is developed based on Raspbian OS.Therefore, Max2Play supports multi-threading. You can improve the performance of LMS, by clicking on settings–> Advanced–> Performance. Please have a look at the below pic:
and you can try to configure those settings as follows:
Database Memory Config —> High (recommended for machines with 1+ GB RAM)
Trigger Scan on Preference Changes —> Prompt to scan, but dont trigger it automatically
Artwork Pre-caching —> Pre-cache album, photo and video artwork

What I have understood form your question that you are trying to play music from iPhone/iPad to your Max2Play device, That could done easily by enabling Shairport (Airplay)on the audioplayer page, and then enable Airplay on your iPhone/iPad.

For sure you have to select the audio output „soundcard“ form the advanced settings for squeezelite audio player in order to have an audio output form the IQaudIO card.

Have you checked the Samba Share settings ? I can see this error in the log:
Slim::Player::Protocols::File::open (102) Error: could not open /media/usb/Music/Compilations/Five Hand Reel _ For A’ That _ Earl O’Moray/2-17 Freedom Come-All-Ye.m4a: No such file or directory
Please recheck this directory again in the LMS and Samba Share.

How have you connected the external storage/Hard-disk ? Does this storage take the power from the RPI ? We recommend you to use separate power supply for the storage, it could be that the storage does not get enough power supply, which could affect the performance.

You can check the port number form the web-interface of LMS, but try to add the Server without the port like this -s macpro.local . unfortunately we could not provide a technical support for the LMS on Apple Mac. However, you can post your question on the slim devices forum:

Please note that we have tested the rotary encoder for IQAudIO and its working well. Regarding to the Mute button, you have to add -X [gpio_button] in the Sqeezelite commandline, maybe you can try to use another rotary encoder, it could be a hardware malfunction.

The Hardware and software settings are right. But could you please describe how the volume control is still not working ? Is there no any sound output ? and is the rotary Encoder Software running with Process ID on the IQaudio plugin ?

I think this behaviour could be because you have multiple Squeezebox servers, we recommend you to have one LMS in the setup. Moreover, please try to add -s [server][:port] in the command line to connect to specified server, otherwise the squeezelite will use autodiscovery to find server.

Have you tried to add -s [server] [:port] in the commandline settings of Squeezelite Audio player page ?, this command is used to Connect to specified server, otherwise it will use autodiscovery to find the server.And we recommend you to use only ONE LMS in the setup.
Could you please send us the debug info for each Squeezelite and Squeezebox server, you can find it on the bottom of the web-interface page.

Please make sure that you have the latest version of Max2Play, if not please download and burn new image.
For the first issue, please try to Follow the bellow steps:
1. Please try to download the latest official version of LMS, which is Logitech Media Server v7.9, and reinstall LMS.
2. if the the problem has not been solved, we recommend you to post this question on the SlimDevices forum :http://forums.slimdevices.comRegarding the second issue, please follow the below steps:
1. You do not have any plugin in the LMS that converts the audio file format.
2. Make sure you are using the default settings in the audioplayer webpage, you can check the bitrate from the debug section in audioplayer page.When you are using the HDMI, the audio sample rate is limited to max 48 KHz. You can check the following website for testing:

According to the picture that you sent, you have the wrong wiring, The GPIO 23 and 24 are used for the rotary encoder. And you can use the GPIO 22 and 25 for the button. Regarding to the ground you should connect it to 0V GPIO, please have a look at the below diagram:
